Twenty-seven years ago today, I said “I do.” It is a little odd (especially since we’ve been divorced for eons) that my big day is still newsworthy enough to write about, but there it is again – splashed all over the pages of this month’s Harper’s Bazaar. This time with an interesting twist…. “The rock ‘n’ wedding has always been an intriguing contradiction. After all, there can be nothing less rock ‘n’ roll than marriage.”

The author proceeds to say, “And yet – here in lies the contradiction – there are few occasions more beguiling in the hallowed history of rock than the moment our musical legends choose to make an honest woman (or man) of their muse.”

Once again, Nick and I find ourselves in rather impressive company – rock royalty in Harper’s Bazaar as opposed to American royalty such as Jackie and President Kennedy, Grace Kelly and Prince Ranier, and Marylin Monroe wedding Arthur Miller in the US Weekly article back then, calling our wedding “one of the most notable nuptials of the last twenty-five years” back then.

Giggles bubbled from within as I read my ex husbands’ comment, “My fondest memory is of dancing. I never usually danced. Julie Anne’s dress had a ruffle on the bottom that stuck out. It was like something out of a zombie movie: me shuffling around, trying to hang on to her, trying not to fall.” I have the wedding video as proof of how hilarious it was.

My fondest memory of the wedding is when Nick, who HATES dancing, and would have done just about anything to avoid it, asked my spinster Auntie Vera to dance. Her dress was ruffle-free, and it was the sweetest gesture, entirely of his own doing. What is your ffunniest wedding moment from your own wedding?

 

 BROWN SUGAR GLAZED SALMON

 

And while we are reminiscing, here is one of my favorite salmon recipes (our wedding guests had a choice of dining on rack of lamb or salmon for their entree). These simple yet delicious ingredients hold up so well and enhance the flavor of the salmon. Elegant enough for a dinner party (or wedding), but easy enough for weeknight dining.

 

SERVINGS: 4
 
INGREDIENTS:
 

1/3 cup brown sugar
3 tablespoons Dijon mustard
1 tablespoons fresh chives, chopped or
1 teaspoon dried
Nonstick spray
4 6 ounce salmon filets
Salt and pepper to taste

 

DIRECTIONS:
 

1). Place rack 7-8  inches from the heating elements. Preheat the broiler in your oven so it is hot.

 

2). Whisk together the brown sugar, mustard and chives; set aside.

 

3). Spray a sheet pan with the nonstick spray. Arrange the salmon filets on the pan, and season to taste with salt and pepper. Pour equal amounts of glaze over each filet and broil 4-8 minutes, depending on thickness of fish and how well done you prefer yours – rare or opaque (never cook past when it begins to flake or it will be dry).

 

SERVING SUGGESTIONS:
 

Serve with Chive New Potatoes & Green Beans.

 

VARIATION:
 

Another similar preparation like this I enjoy is substituting spicy Chinese mustard for the Dijon, omit the chives and mix in a teaspoon of soy sauce with the glaze before applying to the fish. You could also try using tarragon instead of chives in the original glaze.
